About this wine
Character
A grower champagne with generous, ripe aromatics that nonetheless stays bright and fresh. Meunier sets the tone, lending fullness and juiciness, while a vibrant acidity holds both in tension.
Terroir and origin
The grapes come from Coulommes-la-Montagne, Premier Cru, in the northern part of the Montagne de Reims. The microclimate of the Petite Montagne de Reims is cool, damp and rugged, ideally suited to Pinot Meunier. The vines grow on the clay-limestone soils typical of Coulommes. In local usage, "Galipe" translates roughly as vineyard.
Grape variety and vinification
68% Meunier, 22% Chardonnay and 10% Pinot Noir from 25-year-old vines, hand-harvested. Fermentation proceeds spontaneously with wild yeasts, undergoing malolactic fermentation, with ageing in both wood and steel. The base is the 2021 vintage, supplemented with reserve wines; after tirage in May 2022, the champagne matured on the lees. It is bottled unfiltered and with a minimal dosage of just 1 g/l, making it an Extra Brut.
On the palate
On the nose, white blossom, ripe lemon and kumquat with its skin, along with lemon curd, jasmine, white nougat, brioche, roasted nuts and a subtle spice note. On the palate, the champagne is at once linear and full: it coats the mouth without needing a powerful mousse, ripe citrus fruit and juicy stone fruit meet puff pastry and light spice. On the finish it turns saltier and more precise, with salted lemon and fine mineral spice carrying the lingering aftertaste.
Special features
Jean Servagnat studied economics, worked in Paris and London, and returned to Coulommes-la-Montagne; after studying oenology in Avize, he has been bottling his own wines since 2015. He farms 3.5 hectares biodynamically and produces around 6000 bottles a year, with minimal sulphur use and Meunier at the heart of his work.
