About this wine
Character
A mature vintage champagne that plays density against lightness. On the nose, mirabelle plum, quince and candied citrus, opening with air to beeswax, roasted hazelnuts, dried fruit and brioche over a chalky, earthy spice. Disgorged as Brut Nature, meaning with no dosage, it thrives on fruit, salinity and structure.
Terroir and origin
The Mont Miré plot lies in Coulommes-la-Montagne, a Premier Cru of the Petite Montagne de Reims. Beneath heavy brown topsoil, at around one metre depth, lies green clay that retains water and minerals particularly well, sitting above the region's powerful chalk layer. Jean Servagnat farms his 3.5 hectares biodynamically; the Mont Miré 2016 comes from his very first vintage and was bottled in a run of 1,001 bottles.
Grape variety and vinification
The cuvée blends 50% Chardonnay, 25% Pinot Meunier and 25% Pinot Noir. Hand-harvested, spontaneous fermentation with wild yeasts, aged half in wood and half in stainless steel, with no cold stabilization, filtration or fining. Tirage took place in April 2017, and after nearly eight years on lees, the champagne was disgorged with no dosage in March 2025.
On the palate
The attack is juicy and energetic, with ripe yellow fruit and candied citrus notes meeting vibrant freshness. The texture then turns softer and silkier, gaining fullness without becoming heavy. Nutty, spiced maturation aromas combine with pronounced salinity and cool mineral tension, and the finish remains long and saline.
Food pairing recommendations
Oysters, scallops with lemon, wafer-thin sliced Parma ham or lardo.
Special features
1,001 bottles from the first vintage of a micro-grower who, after studying business and spending years in Paris and London, returned to Coulommes-la-Montagne, studied oenology in Avize, and has been bottling his own wines since 2015.
