About this wine
Character
An Aligoté of lean, upright stature. The fruit stays bright and taut, the acidity carries the wine from start to finish, nothing feels polished on. A wine that speaks quietly while remaining precise.
Terroir and origin
Chaumont is one of the parcels from which Jérôme Galeyrand draws his Aligoté, alongside Les Blanches and Alligotay. The domaine is based in Saint-Philibert, east of Gevrey-Chambertin, and farms 5.25 hectares in the northern Côte de Nuits, from Marsannay through Fixin to Gevrey-Chambertin. Galeyrand arrived in Burgundy without a winegrowing family background and bought his first parcel of 0.05 hectares in 2002. 70 percent of the vines are farmed organically, 30 percent according to sustainable principles, pesticides are excluded, and the soils are ploughed mechanically.
Grape variety and vinification
Pure Aligoté, aged in the small cellar at Galeyrand's home. No industrial yeasts, no fining agents, no enzymes, low sulphur: the work is done with fresh grape juice, without technological or oenological intervention. The white wine matures for twelve months in oak barrels from French forests, with the proportion of new wood kept deliberately low so the wood doesn't overshadow the grape.
On the palate
Lemon zest and green apple, alongside white blossom and a herbal note. The acidity stays crisp, the finish salty and long. Dry, 13.0% vol.
Food pairing recommendations
Oysters and fresh seafood, fresh goat's cheese on crusty baguette, river fish in a light butter sauce or poultry with lemon.
Special features
In 2020, Jérôme Galeyrand received a star in the Guide des Meilleurs Vins de France. The domaine's production remains modest: depending on the vintage, around 2,000 cases, or roughly 24,000 bottles.
