About this wine
Character
A single-varietal Chardonnay Champagne bottled without dosage, so nothing can be smoothed over. What it shows comes purely from site, vintage and long ageing on the lees: wine-driven, very dry, carried by a stony minerality.
Terroir and origin
The single vineyard Les Sables lies in Œuilly, where Champagne Tarlant has worked since 1687, now in its twelfth generation with Benoît and Mélanie Tarlant. The quartz-sand soil never allowed phylloxera to take hold, which is why the Chardonnay vines planted in 1962 remain ungrafted.
Grape variety and vinification
Single-varietal Chardonnay, harvested on 28 September 2006. The whole clusters were pressed by gravity, the base wine fermented spontaneously with wild yeasts in Burgundian oak casks and remained on fine lees for six months. No malolactic fermentation, no fining, no filtration. Bottled on 2 May 2007, disgorged on 3 June 2024 without dosage.
On the palate
In the glass, an intense, brilliant golden yellow with a fine, broadly spread mousse. On the nose, ripe apple, ripe vineyard peach and pear compote, alongside warm brioche, toasted almonds and wild herbs reminiscent of linden blossom, sage and chamomile. The palate responds precisely, very dry and distinctly mineral, with the mousse remaining demanding and invigorating.
Food pairing recommendations
Pair with purist dishes with mineral and earthy notes that underscore the Champagne and let it take the lead.
Special features
Only 1,300 bottles exist. Tarlant has been bottling without dosage since the 1970s, and today this applies to over 90 percent of production; the 14 hectares spread across more than 55 parcels are farmed organically.
