About this wine
Character
Sparkling pale golden yellow with delicate green highlights. The nose remains fine and precise: pear, quince and honeydew melon, joined after a little air contact by roasted almonds and freshly whipped butter. An intense minerality envelops the aromas, which hold back in Burgundian fashion rather than pushing forward.
Terroir and origin
The grapes grow in the «Sur Les Vris» climat in Ladoix, not far from the Corton hill. The wine is aged in the historic vaulted cellar of Domaine Chandon de Briailles in Savigny-lès-Beaune, the family estate run by François de Nicolay together with his sister Claude.
Grape variety and vinification
Pure Chardonnay. As a négociant éleveur, François de Nicolay does not buy finished wines but grapes from long-standing partner growers who farm organically or biodynamically. Fermentation, ageing and bottling all take place in his own cellar: spontaneous fermentation, used barrels with a maximum of 20 percent new oak, no added sulfites.
On the palate
Juicy, charming fruit meets a tangy structure that runs into a saline finish and calls for the next sip. At 11.5% ABV, the wine stays dry and lively without losing power. Complexity and drinkability come together here.
Food pairings
With ribbon pasta with parsley root sauce and almonds, with scallops on butternut squash cream, or with crispy guinea fowl with porcini-potato roulade and mushroom jus. The wine also drinks beautifully on its own, though it shows even more alongside refined cuisine.
Special features
Sans Sulfites Ajouté appears on every label in this range, which demands flawless grapes and meticulous cellar hygiene. Against mildew, François de Nicolay uses skimmed milk instead of copper sulfate, one of the first in Burgundy to do so. Between the vine rows, the horses Diva, Epi, Farandole and Gipsy plough the soil.
