About this wine
Character
A cava built on clarity rather than fullness. As a Brut Nature it carries no dosage, and without that sugar residue the saline, chalky minerality stands out unobstructed. The magnum format slows ageing and preserves the tension for years to come.
Terroir and origin
Alta Alella lies two kilometres from the Mediterranean and fifteen from Barcelona's Ramblas, nestled in the Serralada de Marina natural park, where bees, falcons and lizards live among the vine rows. The soil is known as Sauló: sandy granite, markedly acidic, almost free of limestone, with perfect drainage. Yields stay below 6,000 kilograms per hectare.
Grape variety and vinification
The cuvée combines Chardonnay with Xarel·lo, the native variety known here as Pansa Blanca, which finds its most precise expression on the Sauló soil. Brut Nature means: no dosage, not a single gram of sugar after disgorgement. As a Gran Reserva, the wine ages for an extended period on the lees, which gives the bubbles their finesse. 12.0% Vol.
On the palate
Pale straw yellow, fine and persistent bubbles. On the nose green apple, lemon zest and white blossom, followed by brioche and salty sea air. On the palate, taut acidity, yellow pear, crushed chalk and a long, linear finish.
Food pairing recommendations
Oysters, gambas al ajillo, grilled octopus and Jamón Ibérico; also pan-seared sea bass with fennel, a tortilla española or creamy goat's cheese.
Special features
Josep Maria and Cristina Pujol-Busquets bought the overgrown Can Genís estate in 1991 and rescued 60-year-old vines. Today their daughters Mireia and Georgina run the winery, organic from day one. In 2006, Spain's first sulphite-free cava was created here.
