About this wine
Character
Pale golden yellow in the glass. The nose opens with pronounced minerality: smoke, flint, limestone, sea air. With extended aeration, candied apple, quince jelly and orange emerge, joined by iodine-like, subtly bitter notes.
Terroir and origin
Le Mont lies on the first Vouvray plateau, south-facing, directly above the estate's tuffeau caves, and ranks among the most prized vineyards of the appellation. Nine hectares of flinty, siliceous soil and deep green clay produce intensity, minerality and refined structure, carried by a fine acidity. Gaston Huet secured the site for the estate in 1957.
Grape variety and vinification
Pure Chenin Blanc, 14.0% vol. In the late 1980s, Gaston Huet introduced biodynamic farming, and the estate has been Demeter-certified since 1993. Whether a given plot ends up as Sec, Demi-Sec or Moelleux in the bottle is decided by the vintage, not the winemaker. The deep rock-cut galleries serve as the cellar: constant temperature, neutral vessels, time.
On the palate
The delicate sweetness feels charming and remains subordinate to the minerality, which comes through even more strongly here and provides a pleasant lift. Fresh acidity and a fine tannic note lend grip and depth. The long finish recalls bitter orange marmalade and orange zest. A white wine still at the very beginning of its development, one that will gain in the years ahead.
Food pairing suggestions
Arctic char ceviche with oranges, Taggiasca olives and fennel, monkfish saltimbocca with a spicy chickpea and bean salad, and for dessert strawberries with yellow peach in mint-Vouvray jelly.
Highlights
Be sure to decant and serve not too cold, in large glasses. Since 2020, Benjamin Joliveau, a native of Vouvray, has been responsible for the wines of Domaine Huet.
