About this wine
Character
A mature Moelleux that thrives on the contrast between nose and palate: deep yellow-fruited, almost bold opulence on the nose, which tightens with every sip into a lean, mineral drink. 12.0% vol. and a ripe, long acidity keep the sweetness in tension.
Terroir and origin
Le Mont is one of Domaine Huet's three vineyards on the Première Côte of Vouvray, acquired by Gaston Huet in 1957. Little clay, plenty of stone, and directly beneath it the historic tuffeau cellars. These deep rock galleries serve as ageing cellars: constant temperature, neutral vessels, time.
Grape variety and vinification
Chenin Blanc, called the grape of moonlight in Vouvray. Gaston Huet converted the estate to biodynamic farming in the late 1980s, and it has been fully Demeter-certified since 1993. Whether a vintage develops botrytis, and thus a Moelleux, is decided by the weather; depending on the year, each vineyard can yield up to four bottlings, from Sec to Moelleux 1ère Trie.
On the palate
Minimalist freshness and a surprisingly lean frame, with precise contour and mineral drive. Delicate phenolics lend polish, and the acidity carries far. The finish stays ethereally cool over a deep bass note.
Food pairings
Dried pears with a light curry nage and curry leaves on saffron risotto (vegan), shellfish from a saffron and bay-leaf broth or roasted pheasant with bacon and sage.
Special features
Domaine Huet has set the benchmark for Chenin Blanc since 1928 and ranks among the Loire's biodynamic icons. The 1995 shows what decades can achieve here: acidity and fruit in balance, length and finesse gained, with no sign of fatigue.
