About this wine
Character
Amber in colour with lime-green reflections, and a nose that gives away nothing of its age: lemon oil, linden and acacia blossom and mandarin marmalade up front, followed by brioche, caramel, orange liqueur, young cognac, white nougat, pistachio, dried apricot and a pale Virginia tobacco leaf.
Terroir and origin
Le Mont lies on the Première Côte of Vouvray, directly above the Domaine's historic tuffeau cellars. Gaston Huet secured the site in 1957. Little clay, plenty of stone, limestone in the subsoil: Le Mont yields intensely mineral wines that gain length and finesse with age.
Grape variety and vinification
Pure Chenin Blanc, in Vouvray the grape of moonlight. Whether botrytis develops is decided by the weather, not the winemaker; only in exceptional years does Huet bottle a Moelleux 1ère Trie from Le Mont, the most selective harvest tier. The wine aged in the deep rock cellars beneath the vineyard, in neutral vessels at a constant temperature. 12.5% ABV.
On the palate
The attack is oily and dense at medium intensity; the once-youthful sweetness sits behind the spice, which feels precisely balanced. The acidity draws a line of tension from the first moment to the finish, which closes mineral, cool and dramatically long. There is no sense of this wine ever ending.
Food pairings
Mature mountain cheese aged 18 months or more is the natural companion. Also aubergine with fish fragrance and red-lacquered pork belly with leek and plum sauce, where spice, sweetness and acidity meet.
Special features
Gaston Huet introduced biodynamics as early as the late 1980s, and the entire estate has been Demeter-certified since 1993. This vintage thus dates from the estate's early biodynamic period. A 1ère Trie is made only in a handful of years.
