About this wine
Character
Vibrant, powerful and fresh: on the nose, quince, pear, apple and honeydew melon, ripe but never cloying, instead lively and fragrant. A wine of real depth, still youthfully closed at present.
Terroir and origin
Le Mont lies on the first Vouvray plateau, south-facing, directly above the estate's historic tuffeau caves, and ranks among the most prized vineyards of the appellation, celebrated for its history and its long-lived wines. Nine hectares of flinty, siliceous soil and deep green clay give the Chenin Blanc intensity, minerality and a refined structure, carried by beautiful acidity.
Grape variety and vinification
Pure Chenin Blanc. Whether a vineyard yields a Moelleux is decided by the weather, not the winemaker; in 2018 this sweet bottling came in at 13.0% ABV. It is aged in the estate's deep rock-cut cellars: constant temperature, neutral vessels, time.
On the palate
Creamy fruit and sweetness on entry, then fine salinity and lively acidity, citrusy, herbal, dancing. With air, candied ginger, cinnamon and a subtle touch of clove emerge. Excellent ageing potential: be sure to decant and serve not too cold, in large glasses.
Food pairing suggestions
With chicken soup with coconut milk, Thai basil, kaffir lime leaves, chili and galangal, with fried sea bream with lemon and basil, and for dessert with tarte Tatin with marzipan and apricots, delicately salty.
Distinctive features
Gaston Huet introduced biodynamics in the late 1980s; the estate has been Demeter-certified since 1993. Cellar master Benjamin Joliveau, a Vouvray native, has overseen the wines since 2020.
