About this wine
Character
A lean, dry white wine at 11.5% Vol. Lively acidity carries lemon and green apple, backed by white blossom, green herbs and a saline minerality. This wine seeks tension and clarity rather than body.
Terroir and origin
Sicily, Mount Etna. I Vigneri's vineyards rise to 1,200 metres above sea level, on soils of cooled lava, volcanic ash and sand. Salvo Foti upholds the alberello training method there, the historic bush-vine system that UNESCO has designated a World Heritage cultural practice. There are no iron posts, concrete pillars or wires in the vineyard, only chestnut stakes from Etna; every vine is tended by hand. Foti works with old, often ungrafted vines and small yields. Bottling takes place in Randazzo.
Grape variety and vinification
Savagnin, a rarity on Etna. The grapes are gently processed in the historic palmento, fermentation proceeds spontaneously with wild yeasts. Ageing takes place in neutral vessels, used wooden barrels or cement tanks, which leave fruit and origin untouched. The winery rejects any chemical intervention.
On the palate
Dry, precise and cool, with clear citrus fruit and a touch of herbs. The acidity stays taut right through to the finish, which comes across as saline and mineral.
Food pairing
Pairs well with seafood, such as prawns or mussels in white wine broth, as well as grilled fish with lemon and olive oil. Pasta with sardines and fennel, caponata or a young, mild pecorino also find a place at the table.
Special features
Savagnin on black volcanic soil: a grape variety cultivated here according to Etna's old rules, from hand-tended bush vines to spontaneous fermentation in the palmento.
