About this wine
Character
A dry Pinot Noir at 13.5% vol. that shows the signature of Domaine Hubert Lignier in an approachable form: cool fruit, fine-grained tannin, a clear line rather than power, built for length.
Terroir and origin
The grapes come from three sites in Morey-Saint-Denis in the Côte de Nuits. The Lignier family has worked this land since the 1880s: Jacques Lignier bought parcels back then that phylloxera had devalued, and his son Jules patiently replanted them. Today Laurent Lignier runs the estate in its fifth generation.
Grape variety and vinification
Single-varietal Pinot Noir. Since 2007, no synthetic products have entered the vineyards, and the soils are ploughed. Long, cool maceration periods precede fermentation, and the proportion of whole clusters has grown over the years. Laurent Lignier deliberately holds back new oak and spreads it across four coopers so that no single barrel dominates the wine.
On the palate
On the nose, dark cherry, raspberry and blackberry, with violet, damp earth and a touch of spice. The flow is silky, the tannin fine-grained and well integrated, the acidity keeps the wine lively; the finish stays spicy and long.
Food pairings
With pan-seared duck breast, with coq au vin or boeuf bourguignon, and also with rack of lamb in an herb crust. On the cheese board, it pairs well with mature Époisses and Comté.
Distinctive features
From 1973 onward, Hubert Lignier bottled his wines himself rather than selling them as bulk wine to négociants. The cellar in Morey-Saint-Denis, occupied since 2008, works by gravity alone: from the crush to the bottling, no pump ever moves the wine.
