About this wine
Character
Bright golden yellow. The nose is reductive and still marked by the youthfulness of its barrique ageing: dried apricots, preserved pineapple, honey, caramel and wood smoke. With air, wild mint, anise, coriander and fennel emerge. A wine that doesn't hide its youth and rewards patience.
Terroir and origin
The vines stand at the southern tip of the Tuniberg near Freiburg. This ridge is a fault block of Jurassic limestone that remained suspended during the formation of the Upper Rhine Rift; above it lies Ice Age loess. In the steeper southern part, this loess layer is thinner, so the roots reach down into the Jurassic limestone. Klaus and Maj Britt Vorgrimmler farm 3.2 hectares there.
Grape variety and vinification
Single-varietal Chardonnay, hand-harvested and fermented with wild yeasts from the estate's own vineyards. This is followed by two years of ageing in barrique, no filtration, direct bottling. 13.0% vol., dry.
On the palate
Refreshing and juicy, the delicate fruit from the nose carries through and meets an intense herbal note of linden blossom, fennel, fennel herb, a touch of artichoke and coriander. The finish reveals fine acidity and a pronounced herbal spice.
Food pairing recommendations
Pan-seared turbot with fennel vegetables, veal chop with herb butter or a creamy artichoke soup.
Special features
The name is dedicated to the memory of the winery's cats. The estate has farmed organically since 1985 and has been Demeter-certified since 2006; vineyard work follows the lunar phases according to Maria Thun, and alfalfa, buckwheat and various clover varieties grow between the vine rows. As a demonstration farm for the German Federal Ministry of Food, Agriculture and Consumer Protection, the winegrowing couple shares their working methods with others.
