About this wine

Character

A Sauvignon Blanc crafted with virtually no cellar intervention: 12.0% ABV, dry, dense and fresh at once. NUMEN, Latin for the spirit of a place, represents Johannes Zillinger's line of minimal intervention. On the nose, countless wild herbs, ripe tomato, gooseberry, rhubarb, and lemon balm, alongside impressions of concentrated broth and smoky aromas.

Terroir and Origin

The estate's 23 hectares are situated on limestone and sandstone soils around Velm-Götzendorf in the south-eastern Weinviertel. Sheep graze between the vines, home-grown herbs are turned into teas and extracts for vineyard treatments, and trees and shrubs line the eastern edges of the plots as climatic buffers. The estate is Demeter-certified.

Grape Variety and Vinification

Physiologically fully ripe Sauvignon Blanc grapes from the estate's oldest vines, individually selected. They undergo a brief intracellular fermentation in amphorae, after which the wine ages on the lees for 16 months without intervention. Bottled unfined and unfiltered.

On the Palate

The wine cuts razor-sharp across the palate, laying down a pronounced salty minerality. Joined by yellow fruits, wild strawberry, and sweet gooseberry, it is juicy and light on its feet, offering plenty of umami and a very long finish.

Particularities

More than 60 percent of the estate's wines age in amphorae and large casks made of oak and acacia—a philosophy sparked by a trip to Georgia in 2011. Hans Zillinger converted the estate, founded in 1673, to organic farming back in 1984, with Johannes taking over in 2012. The Gault&Millau jury named the Numen Fumé Blanc 2017 «Alternative Wine of the Year 2020».
