About this wine

Character

A rosé that takes its colour and tannin seriously: deep purple in the glass, vinified dry, 12.0% Vol., topped with a floral fragrance that lends the wine a sense of weightlessness. NUMEN denotes a metaphysical activity and stands, for Johannes Zillinger, for the wines with the least intervention in the cellar.

Terroir and origin

The estate's 23 hectares lie on limestone-sandstone soils around Velm-Götzendorf in the southeastern Weinviertel. On the eastern edges of the vineyards, Johannes Zillinger plants trees and shrubs as a climate buffer; sheep graze between the vine rows, while Kunekune pigs and chickens loosen the soil. The herbs for teas and extracts grow between the rows.

Grape variety and vinification

Sankt Laurent, fermented for six months with carbonic maceration in amphorae, then pressed slowly and gently by hand. The wine sediments for four months without any intervention in 500-litre acacia and oak barrels. Spontaneously fermented, bottled unfiltered and unfined.

On the palate

The nose opens with sour cherry and sour cherry stone, elderberry and elderwood, joined by boxwood along with cinnamon and star anise. On the palate, vibrant freshness and fine tannin; the fruit shifts towards red berries, bringing the rosé character back to the fore.

Food pairings

A wine for creative cuisine.

Special features

The estate has existed since 1673. Hans Zillinger converted to organic viticulture in 1984, Johannes Zillinger took over in 2012 and has worked under Demeter certification ever since; the Demeter logo appears on the label. Over 60 percent of the wines are made in amphorae and large oak and acacia casks.
