About this wine
Character
A Grüner Veltliner with structure and tannin, grown on the estate's oldest vines. Even on the nose it makes a clear, deep statement, and the wine carries that power through to the finish.
Terroir and origin
Velm-Götzendorf lies in the southeastern Weinviertel, and the estate's 23 hectares sit on limestone-sandstone soils. Founded in 1673, the estate has been farmed organically since 1984. Johannes Zillinger took over in 2012 and works biodynamically: sheep graze between the vines, herbs for teas and extracts are grown on site, and trees and shrubs on the east side of the vineyards act as a climate buffer.
Grape variety and vinification
Physiologically fully ripe Grüner Veltliner grapes, specially selected, briefly fermented intercellularly in amphorae, then aged 22 months on the lees without intervention. The NUMEN line stands for the least possible intervention in the cellar: spontaneous fermentation, skin fermentation in kvevri, months of lees ageing, bottled unfiltered and unfined.
On the palate
The opening feels both sweet and salty, with no residual sugar involved. The vibrant acidity gets the saliva flowing, underpinned by pronounced minerality and fine tannin. Aromatically: green apple, walnut, pepper and young mango, alongside wild herbs such as tree blossom, tarragon and sage. The finish is exceptionally long and spicy, whetting the appetite for culinary pairing.
Special features
NUMEN denotes a metaphysical activity, Latin for the spirit or divine power of a place. Johannes Zillinger brought the practice of working with clay vessels back from Georgia in 2011; today over 60 percent of his wines are made in amphorae and large oak and acacia casks. The label carries the Demeter logo. The winemaker on this line: "These wines hold all the crazy ideas of recent years."
