About this wine

Character

A pale, delicate wine that can just as easily be read as a light red wine. Silky tannins, clear acidity, and an interplay of sweet berry fruit and tart, earthy notes.

Terroir and Origin

The vines grow on limestone and sandstone soils around Velm-Götzendorf in the south-eastern Weinviertel. The grapes come from an estate massal selection of over 100-year-old Sankt Laurent vines. The estate is Demeter-certified, grazing sheep between the rows and cultivating its own herbs for vineyard treatments.

Grape Variety and Vinification

Single-varietal Sankt Laurent from physiologically fully ripe grapes. Six months of macération semi-carbonique in kvevri, followed by four months of hands-off ageing on the lees in 500-litre acacia tonneaux. Bottled in March 2023, unfined, with 25 mg/L sulphites. pH 3.2, one gram of residual sugar, 12.0% ABV.

On the Palate

On the nose, dried violet blossoms, sour cherry, and cherry pit, along with red berries, stony minerality, bay leaf, a hint of undergrowth, and a touch of Piment d'Espelette. Charming on the palate, with silky tannins, invigorating acidity, and a delicate, lingering finish.

Food Pairings

Grilled Radicchio Tardivo with Kampot pepper and beetroot vinegar, sliced onglet with polenta and cherry jus, or cod with cocoa nibs on Savoy cabbage purée with Piment d'Espelette.

Special Features

NUMEN is the Latin word for spirit or the divine power of a place, representing Johannes Zillinger's lowest-intervention wines: spontaneous fermentation, skin contact in kvevri, bottled unfiltered and unfined. The kvevri arrived in the Weinviertel following his journey to Georgia in 2011.
