About this wine
Character
Young and closed: the aromatic profile remains austere and skeletal, with lemon zest and the white pith of citrus fruit, wet chalk, rock dust and ground oyster shell, alongside tart accents of savory and sage. An unhewn block whose sculpture has yet to emerge.
Terroir and origin
The monopole vineyard Im Sonnenschein lies near Siebeldingen in the Pfalz. It was formed by the subsidence of the Rhine Rift and the uplift of the Palatinate Forest, which around 220 million years ago brought deep Triassic formations to the surface. The soils are strongly defined by shell limestone, which lends a fine acid structure. The vines stand at 180 to 225 metres above sea level, on a pure south-facing slope with a gradient of 5 to 20 percent.
Grape variety and vinification
Riesling, hand-harvested. The grapes were destemmed, left on the skins for 24 hours, and fermented in stainless steel. 12.5% ABV, dry and fully fermented. The Rebholz family farms 26 hectares across four soil types biodynamically.
On the palate
The entry is citrusy and austere, with grapefruit and salt up front and pronounced phenolics that wrap the acidity in velvet. Aromatically it stays with citrus and sage, showing lively bitter notes and a raw texture. Full-bodied, warm in style, with a long finish and subtle herbal spice on the aftertaste.
Food pairings
Grilled zucchini with a vinaigrette of chopped capers and lemon oil with cucumber yoghurt, pan-fried sea bream on white bean purée with preserved lemon beurre blanc, or veal tartare with lemon-caper-anchovy emulsion.
Highlights
Im Sonnenschein is the estate's monopole vineyard and ranks among its top VDP sites. What began in 1889 with great-grandfather Eduard as an idea for natural wine is carried on today by Hansjörg and Birgit Rebholz together with their twin sons Hans and Valentin; Hansjörg Rebholz led the VDP Pfalz for 25 years.
