About this wine
Character
A white wine of density and transparency all at once: vital acidity, inner strength, and a yeasty, silky texture that coats the palate and lingers for minutes. With air and warmth, the aromatic profile shifts continuously.
Terroir and Origin
The vines are located around Velm-Götzendorf in the southeastern Weinviertel on limestone-sandstone soils. The estate has been there since 1673; Johannes Zillinger manages it in the third generation, Demeter-certified, with sheep grazing between the vines and home-grown herbs used for vineyard treatments.
Grape Variety and Vinification
Single-varietal Sauvignon Blanc, harvested by hand on 17 September 2020. 80 percent of the grapes underwent whole-cluster pressing, while 20 percent fermented intracellularly for five days in 500-litre amphorae. Following slow pressing, the wine matured for twelve months under flor yeast in three old Champagne barrels. Total sulfur 18 mg, pH 3.2, residual sugar 0.7 grams.
On the Palate
On the nose, cellar apples, meadow honey, mature yeast dough, and beeswax, joined by ground almonds, blond tobacco, a touch of walnut, as well as candied ginger, candied pineapple, ripe kumquat, and verbena. On the palate, vital acidity and distinct notes of lime and grapefruit lead the way, complemented by a hint of gooseberry, preserved lemon, and lemon balm.
Food Pairings
Grouper with fish roe beurre blanc, capers, and fennel fronds, turnip carpaccio with elderflower syrup and gooseberry oil, or roast chicken stuffed with preserved lemon, capers, and za'atar.
Special Features
Aging under a veil of flor yeast defines the texture and aromatics of this Sauvignon Blanc. Demeter-certified, minimally sulfured, dry at 12.5 percent alcohol.
