About this wine

Character

This Chardonnay from Burgundy shows ripe fruit and a creamy build without losing its contour. Its radiant golden yellow hue announces what the nose reveals generously: yellow apples, soft pears and quince, alongside garden herbs such as chervil and sage, mild spices in the direction of dukkah, as well as unroasted hazelnuts and salted buttered toast.

Terroir and origin

En Carementrant is a small single vineyard at the foot of the Roche de Vergisson. The soils are limestone and clay, the plot faces south and sits at around 350 metres. The vines date from the 1950s and 1960s and are farmed biodynamically.

Grape variety and vinification

Pure Chardonnay, hand-harvested and pressed as whole clusters. Fermentation happens spontaneously, and ageing follows the classic path on fine lees in stainless steel tanks or used wood barrels, with moderate sulphur use. The wine is dry and has 13.5% ABV.

On the palate

The entry is harmonious and polished, the texture silky-matte. Alongside the ripe fruit come caramel and fleur de sel, the toast leans darker, the butter reminiscent of raw milk. A creamy blend with clear structure, dense extract and real drive; a savoury edge frames the long, fruit-forward finish.

Food pairing recommendations

Pairs well with sole in beurre blanc, veal in morel cream sauce and corn-fed chicken with herb jus. Also a convincing match with aged Comté.
