About this wine
Character
A Chardonnay from the southern Burgundy region, bright and crisp in the 2020 vintage. On the nose, white blossom, pencil shavings with graphite and wood, along with oregano and verbena, blanched almonds and yellow and green citrus fruit. The overall impression is vivid, clear and precise.
Terroir and origin
The Les Quarts climat ranks among the finest terroirs of the Pouilly-Vinzelles appellation. The vineyard faces south-east, the Chardonnay vines are between 48 and 80 years old and root into silica-rich, notably iron-rich clay-limestone soil dating from the Bajocian. Jean-Philippe and Jean-Guillaume Bret took over the estate in 2000 and converted it to biodynamic farming; the soils are partly worked with a horse.
Grape variety and vinification
Pure Chardonnay, hand-harvested on 24 and 25 August 2020. Whole-cluster pressing, spontaneous fermentation, followed by 17 months of ageing: eleven months in pièces, then in foudres, with malolactic fermentation running to completion. Added sulphur is 40 mg/l.
On the palate
Powerful and firm, with light tannin and a particularly driving, intense acidity in this vintage that lends tension. The citrus-edged brightness merges with the silkiness of the lees ageing and a certain fleshiness. 14.0% vol., dry.
Food pairings
Monkfish cheek ceviche with leche de tigre, yuzu and celery, fennel risotto with smoked eel or salad with grapefruit, burrata, lemon-ginger oil and coriander seed.
Highlights
Bottled in a 1500 ml magnum. The label carries the Demeter logo; La Soufrandière has been Ecocert organic-certified since 2003 and biodynamic since 2006. The estate's wines are bottled unfiltered and with only minimal sulphur.
