About this wine
Character
A sparkling wine without a single gram of dosage: dry, taut, carried by chalky minerality and a creamy mousse. The large format gives it a slower and more even maturation.
Terroir and origin
Recaredo farms 50 hectares of its own vineyards on the right bank of the Bitlles river, in the hilly landscape of the coster del Bitlles. The plots lie in Alta Penedès, the higher-altitude part of the appellation. The soil is distinctly calcareous, as shown by the white stones between the vine rows.
Grape variety and vinification
Macabeu and Xarel·lo from the estate's own, biodynamically farmed vineyards. Bottle fermentation takes place under natural cork rather than crown cap, each bottle is riddled by hand, and disgorgement happens without freezing the bottle neck, achieved solely through skilled movement of the bottle. It is bottled without dosage.
On the palate
Apricot, yellow apple and citrus zest, with brioche and toasted almond beneath. The acidity keeps the wine taut, the minerality comes across as saline and chalky, and the finish lingers long, with a fine bitter note of grapefruit.
Food pairing
With scallops and grilled fish, with dishes featuring truffle or mushrooms, as well as with smoked salmon and aged Manchego.
Special features
Josep Mata made his first Cavas in 1924, and the estate took its name from his father, Recaredo Mata. Since then, the house has produced exclusively Brut Nature. Today Ton Mata, the founder's grandson, runs the estate, which became the region's first Demeter-certified winery in 2010. In 2019 he was among the founders of Corpinnat.
