About this wine
Character
A Grosses Gewächs that draws its power not from fruit but from spice, herbs and acidity. Coolly contoured, taut in structure, with a drinkability born from the interplay of acid tension and spice.
Terroir and origin
The parcel lies on the eastern edge of Oestrich, at 120 metres altitude, with a 15 percent south-facing slope. The subsoil is lime-rich loess loam with terrace sediments from the primeval sea, threaded with veins of Taunus quartz. The site is exposed to wind, and this coolness lets the grapes ripen slowly and healthily.
Grape variety and vinification
Pure Riesling from biodynamic farming under Demeter guidelines. The whole grapes are pressed gently and slowly, and fermentation proceeds spontaneously with natural yeasts. The wine matures for sixteen months on full lees in traditional Stück casks of 1,200 litres and Doppelstück casks of 2,400 litres. 3.6 g/l residual sugar is balanced against 7.4 g/l acidity.
On the palate
The nose opens with ripe peach, yellow plum, mirabelle and juicy golden-yellow pear, followed by turmeric and a touch of saffron. With air come cubeb pepper, allspice and cardamom, dried marjoram and sage, fresh bay leaf, lemon thyme and freshly chopped almonds. On the palate, spice and herbs lead, with the fruit initially staying in the background. The texture is clear and lively, the minerality delicate, the finish bright and pure.
Food pairings
With steamed turbot, cured char with horseradish, asparagus with hollandaise sauce, pale veal with morels and spicy hard cheese.
Special features
Jacobus Kühn founded the estate in 1786 in Oestrich-Winkel; today Peter Bernhard and Viktoria run the estate in its twelfth generation, with 21 hectares planted almost exclusively to Riesling. Since 2009 the estate has carried the Demeter seal, and restraint governs the cellar: spontaneous fermentation, no fining, minimal sulphur. The 1,500-millilitre magnum slows the wine's development.
