About this wine

Character

A Riesling of two faces: juicy on the nose, with a faintly hovering sweetness of ripe fruit, yet cool and citrusy on the palate. At 12.5% vol., the wine is fully fermented and stays dry, relying on tension, salinity and structure rather than richness.

Terroir and origin

The Siebeldingen vineyard Im Sonnenschein lies in the Queich valley and faces south. The vineyard spans from 160 to 250 metres, with a slope of 5 to 20%. The vines grow on Triassic shell limestone, which lends the wine its fine acid structure and salty depth. Ökonomierat Rebholz farms the site as a monopole.

Grape variety and vinification

Pure varietal Riesling. After destemming, the must underwent 24 hours of skin contact, followed by settling and natural sedimentation. The must fermented in stainless steel, after which the wine matured for six months on fine lees.

On the palate

Juicy, bright and open, with very good acidity and plenty of energy. Citrus fruit drives the wine throughout, joined by plenty of salinity and a fine creaminess that binds its power. A pleasantly firm tannin gives the Riesling additional structure and grip.

Food pairing suggestions

Flame-seared pikeperch with almond foam, salmon ceviche with lime sorbet, cape gooseberries and coriander, and grilled zucchini with dukkah and labneh.

Special features

Hansjörg and Birgit Rebholz carry on the estate founded in 1889 together with their twin sons Hans and Valentin. Across 26 hectares, the family farms four soil types, from Rotliegend through variegated sandstone and shale to shell limestone, biodynamically and without corrections in the cellar.
