About this wine
Character
A Riesling of crystalline clarity: slender, bright, carried by inner tension. At 12.5% vol. it remains light without losing depth.
Terroir and origin
The Jungfer sits at 200 metres of elevation east of Hallgarten, facing south-east, with a 12% gradient. The soil consists of calcareous terraced sediments interlaced with phyllite schist and quartz. The wide temperature swings between day and night keep the acidity vibrant.
Grape variety and vinification
Single-varietal Riesling from Demeter-certified farming, a seal the estate has carried since 2009. It is run in its twelfth generation by Peter Bernhard and Viktoria. The whole clusters are pressed gently and slowly, fermentation begins spontaneously with natural yeasts, followed by sixteen months on full lees in a traditional large oak cask.
On the palate
On the nose, grated lime and lemon zest, kaffir lime, grapefruit flesh and a touch of white peach, over lemon balm, chervil, lemongrass and coriander, moving into fennel seed that lends an anise-like, dark note. On the palate, the 7.6 g/l acidity cuts through razor-sharp and perfectly linear, accompanied by an astringency reminiscent of biting into red and yellow apple skin. 3.6 g/l residual sugar: bone dry. The finish rings out herb-fresh and long.
Food pairing
Rock red mullet ceviche, cod with fennel vegetables, goat cheese ravioli, and Southeast Asian dishes with coriander and lemongrass.
Special features
Magnum, 1500 ml. Unfined in the cellar, minimal sulphur use. The Demeter logo appears on the label.
