About this wine

Character

A dry-styled Riesling from the Rheingau that brings together density and juiciness. The nose is phenolic and rich in extract: ripe grapes, apples and apple skins, along with sweet yeast, a hint of hops and tobacco, topped with fragrant floral notes of peonies. A dense, inviting impression.

Terroir and origin

The estate's share of the Hallgartener Jungfer sits at around 220 metres above sea level, gently sloped to the southeast and correspondingly cool. The soil consists of erosion material from the Rheingau massif with a high quartzite content, mixed with loess loam.

Grape variety and vinification

Riesling from Demeter cultivation; the estate in Oestrich-Winkel has been certified biodynamic since 2009. In the cellar: spontaneous fermentation, no fining, minimal use of sulphur. Ageing took place in a specially acquired Stockinger wooden cask; because the wine rests in the same cask every year, the wood's influence is barely noticeable. 12.5% vol.

On the palate

Silky, juicy and saline, with ripe fruit of apples, pears and ripe lemon. Despite its creaminess, the wine remains taut and firm, with extract and clear grip. Precise and full-bodied at once, with excellent length.

Food pairings

With grilled tilefish in a broth of yellow tomatoes, ginger and fermented garlic, with skewers of scallops fermented in lemon shijo koji, or with white asparagus fermented in soba shiru tamari and baked.

Special features

The estate dates back to its founding by Jacobus Kühn in 1786 and is today run in the twelfth generation by Peter Bernhard and Viktoria. The Demeter logo appears on the label.
