About this wine
Character
A dry Riesling of cool clarity: 12.0 percent alcohol, 7.5 grams of acidity, 3.6 grams of residual sugar. The magnum format slows the wine's development and gives it time.
Terroir and origin
The Rauenthaler Baiken is among the most distinctive sites in the eastern Rheingau. It lies at 190 to 200 metres above sea level, a southwest-facing slope with over 60 percent gradient. The steepness brings sunshine, while the forest-ringed valley basin creates cool air currents. The soil is poor and shaped by phyllite slate; several nearby water veins nonetheless keep the vines well supplied.
Grape variety and vinification
Pure Riesling, 100 percent hand-harvested by selective picking. The grapes are pressed whole and gently over several hours, and the must ferments spontaneously with natural yeasts, keeping its natural composition unchanged. The wine then rests for 18 months on full lees in traditional wooden casks. The same restraint applies in the cellar as in the vineyard: no fining, minimal use of sulphur.
On the palate
Lemon zest and white peach lead, with elderflower and a smoky, flinty note from the slate underneath. The acidity provides structure without sharpness, alongside a saline depth. The finish is long and cool, with herbal spice and a bitter edge of grapefruit pith.
Special features
The Peter Jakob Kühn estate in Oestrich-Winkel has been family-owned since 1786 and is now run in its twelfth generation by Peter Bernhard and Viktoria. The 21 hectares are farmed according to Demeter guidelines, a certification the estate has held since 2009; the Demeter logo appears on the label.
