About this wine
Character
A finely drawn white Burgundy that seeks its effect not through richness but through tension: silky texture, vibrant acidity and a saline, long finish. 12.5% vol., dry.
Terroir and origin
Combe Bazin is considered arguably the best climat in Saint-Romain: 13.56 hectares facing southwest, with chalky white soils. The site is farmed by Clos du Moulin aux Moines in Auxey-Duresses, where Willy Roulendes has been farming all 16 hectares biodynamically since 2008. Work is done by hand or with a horse, keeping heavy machinery and chemicals out of the vineyard.
Grape variety and vinification
Pure Chardonnay from a selective harvest. The whole clusters are pressed slowly, with fermentation carried out by the vineyard's own indigenous yeasts in wooden vats. The wine then ages for one year in pièces and tonneaux, with a new-oak share of at most 15%. It was bottled unfined, unfiltered and with minimal sulphur.
On the palate
Ripe and silky, with clearly perceptible and pleasantly vibrant acidity. Once again the green and yellow citrus notes appear, joined by a touch of pineapple, herbs and minerality. Toward the finish the wine turns more piquant and saline, and its drinkability increases.
Food pairings
Smoked salmon with crème citronnée, trout ceviche with citrus fruits and nuts or œuf en meurette.
Special features
The estate traces back to a monastic foundation of the Abbey of Cluny in the year 962, making it one of the oldest in Burgundy. Ageing takes place in cellars dating from the 11th and 15th centuries; four monopole vineyards belong to the domaine. On the nose, lime, lemon and calamansi appear with pith and pips, alongside white peach and hazelnut.
