About this wine
Character
Wild and untamed, this Riesling truly lives up to its name. The fruit stays understated, with balsamic and ethereal notes taking centre stage: blackcurrant bush wood, kaffir lime leaves and hay, then coriander seed, anise, fennel, artichoke and pea shoots. Only behind that do lemon balm, lemongrass, lime zest, yellow apple skin and white peach reveal the grape variety in its classic sense.
Terroir and origin
The Fuchsloch parcel lies in the VDP Grand Cru Hipping on the Roter Hang in Nierstein, surrounded by trees, shrubs and herbs. The red-brown clay slate of the Rotliegend shapes the steep slopes and gives the estate's wines their earthy, almost saline note. The family has farmed its parcels since 1350, and Kai Schätzel has run the winery since 2008.
Grape variety and vinification
Riesling from forty-year-old vines. After harvest, the grapes are hand-selected, the must is foot-trodden and cold-macerated for 120 hours. Fermentation and malolactic conversion take place in old 600-litre oak casks. A flor yeast veil then forms, under which the wine matures for 36 months.
On the palate
Bone-dry and grippy, marked by phenolics and structure, like chewing apple skins. The wine builds pressure while remaining light on its feet at 12.0% ABV, gripping without ever feeling tiring. Little fruit, rather understated: dried grass, hay and seeds of fennel and anise.
Special features
Aged in the estate's wooden-cask cellar, over 800 years old. The winery has been a VDP member since 2016 and Demeter-certified since 2023, with the logo featured on the label. In 2020, Schätzel became the first German winery to bring natural-wine Grand Crus to market: spontaneously fermented, unsulphured, bottled unfiltered.
