About this wine
Character
A sparkling wine that lives on drive and salinity rather than opulence. Disgorged without dosage, nothing cushions its structure: wild herbs, salted lemon and roasted hazelnut stand out openly, accompanied by iodine-like and mineral accents. With air in the glass it opens up further and gains in complexity. It works equally well as an aperitif or alongside fine cuisine.
Terroir and origin
The Ökonomierat Rebholz estate is located in Siebeldingen at the edge of the Palatinate Forest. Across 26 hectares, the family cultivates a mosaic of four geological formations: Rotliegend, variegated sandstone, shale and shell limestone. Hansjörg Rebholz farms biodynamically and vinifies his wines fully fermented and dry, without interventions that would obscure their origin.
Grape variety and vinification
Pure Pinot Noir, pressed white. After hand-harvesting, the grapes underwent whole-cluster pressing, with only the first pressing fraction, the "Cuvée", being used. Fermentation and ageing of the base wine took place in used small oak barrels. The sparkling wine then matured for four years in the bottle on the lees before being disgorged without dosage. 11.5% vol.
On the palate
A compact, invigorating drive, carried by juicy fruit and fine, precise carbonation. Apricot and pale nougat lend richness, immediately drawn taut again by the saline finish. The long finale reveals herbal and floral notes.
Special features
Bright, sparkling golden yellow with an exceptionally fine, widely dispersed bead. The long lees ageing and the absence of dosage make the "Pi" a sparkling wine that demands attention rather than simply pleasing.
