About this wine
Character
A sparkling wine of cool character, its nose surprising from the very first sniff: turmeric and persimmon open a spiciness that falls outside the ordinary, joined by ripe apricot, mirabelle plum, clove and allspice. Beneath lies a chalky, stony register, with sea spray, oyster shell, salt stone and dried herbs. Everything stays subtle, with the coolness setting the tone throughout.
Terroir and origin
The plot, at the edge of the forest, measures just under a hectare and was planted in 1940. The soil is strikingly chalky and low in organic matter; the north-facing slope, with its shaded areas, yields grapes of exceptional acidity. Recaredo's 50 hectares lie on the right bank of the Bitlles river, in the hilly coster del Bitlles, and are farmed biodynamically.
Grape variety and vinification
100 percent Xarel·lo from vines over 80 years old. At least 156 months of lees ageing in the cool cellars, bottle fermentation throughout under natural cork, followed by hand disgorgement without freezing, achieved solely through the movement of the bottle. Here, Brut Nature means zero grams of dosage: nothing compensates for what the site does not provide.
On the palate
The first sip fills the mouth with power, built on fine tannin. The acidity moves forward subtly, beautifully integrated through age. Brioche signals autolysis, yet the chalky notes sit above it, with the fruit staying in the background. A saline finish over a phenolically powerful structure, the aromas lingering for minutes.
Distinctive features
In 1999, Recaredo bottled the very first single-vineyard cava in history from this plot. The 2011 vintage yielded 2,646 bottles, at 21 hectolitres per hectare. In 2019, Ton Mata, grandson of the founder, left the Cava DO to co-found Corpinnat: only estate-grown grapes, only hand-harvesting, only native varieties. Since 1924, the house has produced Brut Nature exclusively.
