About this wine
Character
A cava that draws its length from acidity and lees maturation, not from sugar. Brut Nature here means zero dosage, and the wine carries it without harshness, since over 60 months on the lees have given it breadth and creaminess.
Terroir and origin
The grapes come from Can Prats, one of the four family estates that joined forces in 1980 to form Vins El Cep. The vines grow in Alta Penedès on limestone soils between 200 and 400 metres of altitude. The Mediterranean climate with cool nights in the Anoia valley keeps the acidity alive; the first vines were planted there in 1448.
Grape variety and vinification
A cuvée of Xarel·lo and Macabeu, fermented and aged using traditional bottle fermentation. In 2001 the estate converted to organic farming, followed in 2003 by Spain's first biodynamic cava. Lees ageing lasted over 60 months, and the wine was bottled with no dosage. 12.0% vol.
On the palate
Uncompromisingly dry and lean in build. Ripe yellow apple and dried lemon peel meet brioche and roasted almond, with a touch of quince jelly and wild thyme. The finish stays salty and chalky, with a fine bitter note at the very end.
Food pairings
With freshly opened oysters, Jamón Ibérico, sashimi and aged Manchego.
Distinctive features
Maite Esteve runs the estate, which spans 200 hectares of vineyards; the bodega is located in Can Llopart de les Alzines, surrounded by holm oak forest. In 2022 Vins El Cep was recognised as one of twelve "Elaboradores Integrales" in the region, estates that grow and vinify all of their own grapes.
