About this wine
Character
A dense, serious Pinot Noir that stays silent in the glass at first. After around 30 minutes it opens layer by layer: dark fruit, mulberries and elderberry, topped by floral notes of hollyhocks. Beneath that it turns dark — cocoa nibs, espresso crema, damp forest floor, long red pepper and cherry stones. Despite the generous 2022 vintage character, it remains reticent and rewards patience.
Terroir and origin
Santenots is a climat in the commune of Meursault, directly bordering Volnay. Clos du Moulin aux Moines was founded in 962 by monks of the Abbey of Cluny and is located in Auxey-Duresses, between Meursault and Pommard. Since 2008 Willy Roulendes has run the estate and converted all 16 hectares to biodynamic farming; work is done by hand or with horses. The cellars date back to the 11th and 15th centuries.
Grape variety and vinification
Pinot Noir, hand-harvested and re-sorted on the sorting table. Fermentation and maceration take place, depending on the vintage, with 50 to 70% destemmed grapes in large wooden vats over 15 to 20 days, spontaneously with wild yeasts, with daily pump-overs. After pressing, the wine matures for 12 months in used oak barrels, remains unfined and unfiltered, and is bottled with a low addition of sulphur.
On the palate
Powerful and multi-layered, with high inner density and good tension. The tannins are still angular, the extract-sweet fruit framed by sandalwood and liquorice, carried by a ripe, broadly arching acidity. It already offers drinking pleasure now, though a few years of bottle age will suit it well. 12.5% vol., dry.
Food pairing recommendations
Recommended with "fish-fragrant" aubergine from Chinese cuisine, whose spicing leaves room for the dark fruit and pepper note.
Special features
One of Burgundy's oldest wine estates, with four monopole vineyards and classic vinification in centuries-old cellars. New oak is now used only sparingly, so that the floral and fruity aromas are not overlaid by toasted notes.
