About this wine

Character

A Pinot Noir that takes its time. On the nose, it begins with noble understatement, revealing what it has to offer only bit by bit: red fruit in broad strokes, a certain spiciness, along with undergrowth, autumnal forest and dried leaves, all topped by delicate floral notes. In the glass, dark ruby red, transparent and clear.

Terroir and origin

The premier cru vineyard Les Valozières lies between the grand cru sites of Corton Bressandes and Corton Paulands. The 0.28 hectares were planted in 1987. The topsoil is defined by clay, while the subsoil is rich in limestone with flint inclusions. The Domaine Chandon de Briailles in Savigny-lès-Beaune farms 14 hectares, planted exclusively with Pinot Noir and Chardonnay, and ploughs the vine rows entirely with its four horses.

Grape variety and vinification

Pure Pinot Noir. Claude de Nicolay vinifies without fining or filtration; whole-cluster fermentation has been standard since 2011, with the proportion varying by vintage. The red wines age for 14 to 20 months in barrel, with a maximum of 15 to 20 percent new oak. François de Nicolay calls the result a "neo-classical" Burgundian style.

On the palate

More concrete than on the nose. The tannin structures and channels the deep power into orderly lines, a blend of red and black fruit pulses with tremendous drive, the acidity ripe and supportive. Ageing in oak lends mild spice and a touch of sandalwood to the finish. Powerful and compelling, with excellent potential for both immediate enjoyment and several years of bottle ageing.

Food pairings

Braised pigeon with celeriac purée and spiced plum jus, catfish fried in a buckwheat crust with anise-scented swede ragout, or, for a vegetarian option, grilled beetroot with thyme crème fraîche and baguette.

Special features

Since 2011, the domaine, founded in 1834, has been fully biodynamic certified, Demeter. The cellar dates back to the 12th century, built by monks of the Abbey of Cîteaux.
