About this wine
Character
A Champagne with depth and drive. The AUSTRAL brings together the south-facing sites from which Benoît Doussot sources for Clandestin, and shows itself as multi-layered rather than upfront. As a Brut Nature, it remains undosed: the sweetness is deliberately absent, letting the structure stand free.
Terroir and origin
The Côte des Bar in the southern Champagne region. The vines grow on Kimmeridgian marl and Portlandian limestone, Jurassic soils rich in fossilised marine shells, which give these Champagnes their minerality. For the AUSTRAL, the grapes come from south-facing slopes that lend the Pinot Noir ripeness and depth.
Grape variety and vinification
Single-varietal Pinot Noir from organically farmed vineyards belonging to eleven partner growers. Spontaneous fermentation begins under temperature control, and the base wine matures for twelve months in 500- to 600-litre barrels, which Doussot prefers over smaller ones because they keep the wine leaner and require less sulphur. A winter spent blended in tank follows. After bottle fermentation, the Champagne rests for at least 15 months sur lattes.
On the palate
Dark cherry and ripe red berries, joined by floral notes and a spicy, chalky undertow. The attack is taut, the bead fine, a saline freshness carrying through into the long finish, where a fine tannic structure remains perceptible.
Special features
Clandestin is a micro-négoce: Benoît Doussot, trained at the Lycée Viticole in Beaune and under Jean-Philippe Fichet in Meursault, owns no vineyards of his own. He buys exclusively organic grapes, supports his growers through conversion, and pays them fair prices. Since 2023 he has worked from his own winery in Landreville, built on two levels to allow gravity-based vinification. This bottle holds 1500 ml.
