About this wine

Character

Purism with an edge: bottled without dosage, without filtration and without sulphur, this Chardonnay shows its chalky substance unadorned. Taut acidity, chalky minerality and a cool, saline finish define the wine, not opulence.

Terroir and origin

The vines grow in Buxières-sur-Arce in the Côte des Bar, in the south of Champagne. Five hectares on Kimmeridgian and Portlandian limestone, and it's this limestone that gives the wine its saline structure. Bertrand Gautherot began in 1986 with his family's vineyards and is considered the spiritual father of the Côte des Bar. Richard Juhlin calls the estate "the only four-star estate outside the Marne".

Grape variety and winemaking

Pure Chardonnay. Fermentation happens spontaneously with wild yeasts, aging takes place in wood. Brut Nature here means literally: no dosage, plus no filtration and no sulphur. Every step of the work is done by hand, from pruning to disgorgement. 12.0% vol., dry.

On the palate

Bone-dry and lean, carried by lively acidity. Lemon zest, green apple and white blossom up front, followed by chalk, brioche and a fine nutty note. The finish stays cool, long and saline.

Food pairing

Oysters and raw scallops, sole fillet ceviche, tartare or delicately poached fish. For cheese, Chaource and Comté echo the saline note.

Special features

Since 1998, Champagne Vouette & Sorbée has held Demeter certification, the first estate in the region to do so. The wines are rare and sought-after, the 1500 ml magnum even more so.
