About this wine
Character
A Champagne that forgoes any correction: no dosage, no filtration, no added sulphur. What remains is Pinot Noir, limestone and yeast, in that order. The 1500 ml magnum allows the wine to mature more slowly than smaller formats.
Terroir and origin
Five hectares in Buxières-sur-Arce, in the south of Champagne, on Kimmeridgian and Portlandian limestone. Bertrand Gautherot, the spiritual father of the Côte des Bar, took over his family's vineyards in 1986. Since 1998, Champagne Vouette & Sorbée has held Demeter certification, the first estate in the region to do so.
Grape variety and vinification
Pure Pinot Noir, fermented spontaneously with wild yeasts and aged in oak barrels. Every step is done by hand, from pruning to disgorgement. The code R22 denotes the year of riddling. Brut Nature means that after disgorgement, not a single gram of sugar is added. 12.0% Vol.
On the palate
Golden yellow with a coppery sheen, the mousse fine and persistent. On the nose, cherry and raspberry, underpinned by brioche and yeast, with a chalky note. The palate entry is taut, the acidity carries without harshness, and the finish stays saline-mineral and bone-dry for a long time.
Food pairings
A Champagne for the table, not just for the aperitif. With oysters and raw seafood, with grilled lobster or grilled turbot. Beef tartare also holds its own. For those who wish, pair it with aged Comté or pungent Époisses.
Special features
Biodynamic farming under Demeter certification since 1998, handwork throughout the entire process, bottled without dosage. The estate's wines are rare and sought after.
