About this wine

Character

A Blanc de Blancs of uncompromising clarity: pure Chardonnay, with no dosage, no filtration, no sulphur. Cool on entry, dense at the core, with a chalky length. A Champagne that makes its limestone soil audible and forgoes any softness.

Terroir and origin

Vouette & Sorbée is located in Buxières-sur-Arce in the Côte des Bar, the southern part of Champagne. Bertrand Gautherot, the spiritual father of this area, took over his family's vineyards in 1986 and farms five hectares on Kimmeridgian and Portlandian limestone. This limestone gives the Chardonnay its chalky signature.

Grape variety and vinification

Pure Chardonnay, spontaneously fermented with wild yeasts and aged in wooden barrels. Bottled without filtration and without sulphur, as a Brut Nature with no dosage whatsoever. Every step is done by hand, from pruning to disgorgement. The designation R22 denotes the base of the wine: Gautherot thinks in blends, not vintages.

On the palate

Taut and precise, with lemon zest, green apple and white blossom, followed by chalk, brioche and a saline trace. The acidity stays crisp, the finish dry and long.

Food pairings

Oysters and raw seafood, sole in beurre blanc, poultry with mushrooms, alongside Comté or aged Chaource. Sashimi and goat cheese also suit this style well. A wine better suited to the table than to a reception.

Notable features

The estate has held Demeter certification since 1998, the first in the region to do so. Gautherot called his cows his marketing department — the farm's cycle is part of the work in the vineyard. The wines are rare and sought after.
