About this wine
Character
The BORÉAL Brut Nature 2020 is a single-varietal Pinot Noir from the Côte des Bar, bottled with zero dosage and offered here in magnum format at 1500 ml. Brut Nature means: no sugar added after fermentation in bottle, no correction. What remains is fruit, acidity and salinity, at 12.0% ABV.
Terroir and origin
The grapes grow on northern-facing sites in the southern Champagne region, on Kimmeridgian marl, a Jurassic-era soil rich in fossilised sea shells. This origin defines the BORÉAL's character: wild strawberry and saline freshness rather than richness.
Grape variety and winemaking
Clandestin is a micro-négoce with no vineyards of its own. Benoît Doussot buys exclusively organic grapes from eleven growers in the Côte des Bar and supports them through their conversion to organic viticulture. Spontaneous fermentation begins under temperature control, and the base wines age for twelve months in 500- to 600-litre barrels, which he prefers over smaller vessels because they keep the wines leaner and require less sulphur. A winter in tank as a blended lot follows, and after the second fermentation in bottle, at least 15 months sur lattes.
On the palate
Taut and bone-dry, with wild strawberry, lemon zest and a delicate yeasty spice, carried by saline freshness and a clear, lean texture.
Distinctive features
Benoît Doussot graduated from the Lycée Viticole in Beaune in 2015 and trained with Jean-Philippe Fichet in Meursault; his first cuvées were made in the converted barn of Bertrand Gautherot (Vouette & Sorbée). Since 2023 he has worked in his own cellar in Landreville, built over two levels for gravity-flow winemaking. All of Clandestin's Champagnes remain undosed.
