About this wine
Character
A Crémant for explorers: aromatically expansive, structurally lean, carried by taut acidity.
Terroir and origin
Domaine Boris Champy farms twelve hectares around Nantoux in the Hautes-Côtes de Beaune, at altitudes ranging from 377 metres at Clou to 421 metres at Bignon. The name Elévation 424 alludes to these elevations. The late ripening at this altitude preserves freshness and elegance; for Boris Champy, sites like these represent Burgundy's future in the age of climate change. Hedgerows, stone walls, orchards and sheep define the landscape around the estate.
Grape variety and vinification
Single-varietal Aligoté. The approach is minimal-intervention: spontaneous fermentation with native yeasts, gentle extraction, restrained use of oak. Finished as Extra Brut, meaning a very low dosage.
On the palate
On entry, taut acidity and a vigorous mousse counter the fullness of the nose. Aromatically, it proves broader and more multifaceted than its lean, acid-driven form suggests: dried apricots, sliced apple, honeydew melon, candied citrus peel and quince jelly, alongside shortbread and beeswax. A creamy richness and wild oxidative notes reminiscent of apple and pear cider bridge the gap between tension and fullness.
Food pairings
Mini quiches with apple and leek topped with smoked crème fraîche, scampi patties with a piquant quince and lemongrass chutney, or suckling pig ribs on braised quince cabbage.
Special features
In 2019, Boris Champy took over the estate founded in 1984 by Didier Montchovet, Burgundy's first Demeter-certified winery. Previously, he had run estates in California and Burgundy, before a pilgrimage along the Camino de Santiago led him to a new direction. The biodynamic preparations come from a self-built tisanerie, and the Demeter logo appears on the label.
