About this wine

Character

The Montagne 382 is a dry Chardonnay from the Hautes-Côtes de Beaune, bottled as a magnum. The nose holds the balance between a touch of reduction and oxidation, oak and vanilla on one side, ripe, juicy fruit on the other: ripe yellow apples, pears, apricots and citrus fruit, along with hay, cider apples and a touch of green pineapple. In the glass, a medium lemon yellow with a slightly green hue.

Terroir and origin

The grapes grow in the Montagne de Cras vineyard in Nantoux, at 382 metres above sea level. The soils are interspersed with pebbles (cras or crag means pebble in Celtic), limestone, marl and clay. Of the vineyard's four hectares, three are planted with vines, while one hectare remains compensation land with scree, hedges and fruit trees; the grassy meadows are home to numerous orchids and rare tree species.

Grape variety and vinification

Pure Chardonnay, planted very densely at 10,000 vines per hectare and trained in Guyot and lyre systems. The wine fermented spontaneously and aged for twelve months in pièces, 15% of which were new oak and 35% second-fill, with occasional bâtonnage on the lees.

On the palate

Pleasant fullness, carried by a ripe yet lively acidity. This is joined by a volume of white-fleshed fruit, light oak spice, a touch of vanilla, piquant tart lemon zest and a fine salinity. 13.0% vol.

Special features

Domaine Boris Champy in the Hautes-Côtes de Beaune has been working biodynamically since 1984 and was, at the time, the first estate in Burgundy to be Demeter-certified; the label carries the Demeter logo. Boris Champy took over the estate in 2019 from Didier Montchovet, after ten years at Dominus Estate in the Napa Valley under Christian Mouëix and a stint as estate director at Clos des Lambrays. A custom-built tisanière supplies the biodynamic preparations.
