About this wine

Character

A dry white wine from Burgundy built on smoothness and precision. The nose is classic and clearly defined: acacia blossom and honeysuckle, peach and yellow plum, alongside a hint of reduction as well as vanilla and wood from the barrel.

Terroir and origin

The plots lie in the Hautes-Côtes de Beaune at over 400 metres of altitude, on soils interspersed with limestone, marl and clay. Harvesting took place on 29 September; these were the last grapes of the vintage, arriving in the cellar correspondingly ripe.

Grape variety and vinification

A pure Aligoté Doré from an old massal selection, with the addition "Doré" referring to the colour of the berries. The vines are planted very densely, at 10,000 vines per hectare, and trained in Guyot and lyre systems. The wine fermented spontaneously and was aged for twelve months, 70% in used pièces on the lees and 30% in stainless steel.

On the palate

On the palate, the wine is silky and smooth. Body and concentration only build up on the way from the attack to the finish. The acidity is ripe and precise, giving this late-harvested Aligoté exactly the structure it needs; the finish remains delicately spiced and balanced.

Food pairings

It pairs well with grilled crayfish and scallops in butter sauce, with roast chicken and quiche Lorraine, as well as with Comté and Époisses.

Special features

Domaine Boris Champy in the Hautes-Côtes de Beaune has been working biodynamically since 1984 and was the first Demeter-certified estate in Burgundy. Boris Champy took it over from Didier Montchovet in 2019. The label carries the Demeter logo, and this vintage is bottled in the 1500 ml magnum.
