About this wine
Character
A Pinot Noir that at first seems wild and untamed, only revealing its true line with exposure to oxygen: purist, coolly defined, carried by herbs and spice. Its youth is evident, yet it has the substance to develop over the coming years.
Terroir and origin
The grapes come mainly from organically farmed sites in the Côte de Nuits. Yann Charlopin and Justine Tissier founded their domaine in 2013 in Morey-Saint-Denis and farm just over four hectares in Marsannay, Gevrey-Chambertin, Vosne-Romanée and the Clos Vougeot. Yann trained in the cellar of his father Philippe Charlopin, whose mentor was Henri Jayer, and refined his craft further with Jean-Marie Fourrier.
Grape variety and vinification
Pure Pinot Noir. After destemming comes a cool pre-fermentation maceration and spontaneous fermentation, after which the wine matures slowly for 18 months on fine lees in 228-litre barriques, mostly from François Frères, with under 20 percent new oak. The oak therefore stays in the background.
On the palate
At this stage, tannin and acidity are still demanding and gripping. Layered above is a refreshing impression with pronounced herbal aromas, fine peppery nuances and saline notes. On the nose beforehand, wild raspberries and blackberries, caramelised beetroot, undergrowth, thyme and rosemary, plus a touch of cinnamon bark and white pepper.
Food pairings
Duck breast with thyme jus, roast partridge with mushrooms, rack of lamb with rosemary or pasta with fresh truffle.
Special features
Low yields, minimal intervention, little sulphur and only minimal filtration: the school of Henri Jayer and Jean-Marie Fourrier is evident in this Bourgogne too. The domaine's wines feature on the lists of The French Laundry, Tour d'Argent and Frenchie.
