About this wine
Character
The Bourgogne Pinot Noir "Symbiose" AOC 2024 is a dry red Burgundy from Domaine Hubert Lignier, and its name captures exactly what's in the bottle: the interplay of Pinot Noir and Gamay. At 12.5% Vol., the wine stays lean without losing its structure.
Terroir and origin
Domaine Hubert Lignier is based in Morey-Saint-Denis, on the Route Nationale 74. The family has been tending vines there since the 1880s, and today Laurent Lignier runs the estate as its fifth generation. The wine carries the regional Bourgogne AOC appellation.
Grape variety and winemaking
Pinot Noir and Gamay, a blend with deep historical roots in Burgundy. The cellar, acquired in 2008, relies solely on gravity — from the must to the bottling, no pump is used. Long, cool maceration periods precede fermentation, and the proportion of whole clusters has grown over the years. Laurent Lignier deliberately limits new oak and spreads it across four coopers, so that no single barrel leaves its stamp on the wine.
On the palate
Red cherry, raspberry and strawberry, joined by violet and an earthy, lightly spiced note. The wine flows juicy, the tannin stays silky, the acidity keeps the fruit lively, and the finish is fresh and medium in length.
Food pairing suggestions
With charcuterie and terrines, grilled salmon fillet, mushroom risotto or goat's cheese. Served lightly chilled, the red fruit comes through most clearly.
Highlights
Since 2007, the estate has forgone synthetic treatments in the vineyard. The house style aims for cool precision, fine tannin and length, here in a wine made for everyday drinking.
