About this wine

Character

A Blanc de Blancs of cool clarity: a direct line, saline freshness, fine perlage. The low dosage gives the Chardonnay room instead of cushioning it. In the half bottle, it becomes a Champagne for two glasses on an evening.

Terroir and origin

Chouilly is the northernmost Grand Cru of the Côte des Blancs, where the chalk soils are as pure as anywhere. Jean-Pierre and Caroline Vazart farm 11 hectares across 30 parcels over the gentle hills of the village, including the prized Montaigu vineyard. The vines average 44 years of age and root deep into the limestone. Peter Liem calls the house the most significant grower-Champagne estate in Chouilly.

Grape variety and vinification

100 percent Chardonnay. Jean-Pierre Vazart works consistently in stainless steel, with no oak used: the terroir should speak, not the barrel. The cuvée combines the 2022 vintage with reserve wines, and the dosage stays low so as not to mask the purity of the grape.

On the palate

Lemon zest, white blossom and ripe pear, underscored by wet chalk and white almond. The wine is taut and saline, the perlage fine; it vibrates more than it caresses, and echoes for a long time.

Food pairings

With oysters and prawns, with sole in butter or a risotto with green asparagus. Sushi and sashimi also suit it, as does Comté cheese or young Parmigiano.

Notable

The red-brick house built by Louis-Victor Coquart in 1865 remains the estate's home today; Jean-Pierre and Caroline Vazart run the estate in its third generation. In 2020, he converted entirely to organic farming, giving up the Réserve Perpétuelle begun in 1982, since reserve wines from conventional farming were no longer compatible with organic guidelines.
