About this wine
Character
Chassagne-Montrachet is best known for its white wines. This Premier Cru shows the village's red side: a Pinot Noir with fine structure, restrained fruit and a potential that calls for time in the cellar.
Terroir and origin
The "Les Bondues" site belongs to the Premier Cru holdings of Chassagne-Montrachet. Soils of Jurassic limestone and clay give the appellation's red wines a cool texture and pronounced minerality. Chassagne-Montrachet is one of four villages where Domaine Darviot-Perrin farms its eleven hectares, alongside Monthélie, Volnay and Meursault.
Grape variety and vinification
Pure Pinot Noir. Pierre-Antonin Darviot took over the estate in 2019 at age 25, after the death of his father Jacques, and converted it to biodynamics. In the cellar he works with up to 100 percent whole-cluster fermentation; the stems lend floral notes and silky tannins. The wine is neither fined nor filtered, and sulphur use is kept to a minimum.
On the palate
Ruby red with violet highlights. On the nose, cherry, raspberry and strawberry, joined by floral notes, fine spice and an earthy tone. The entry is silky, the acidity keeps the wine lively, the tannins are finely etched, and the finish is long and mineral. 13.0 percent alcohol, dry.
Food pairings
With roast poularde and Poulet de Bresse, with quail with lentils or veal sweetbreads with morel sauce. On the cheeseboard, Époisses and a robust Comté are ideal partners.
Distinctive features
Ten generations of the Darviot family in Monthélie, where the most valuable parcels have been in family hands since the 19th century. Pierre-Antonin Darviot studied oenology in Beaune and gained experience in the Loire and New Zealand before returning in 2017.
