About this wine
Character
A Pinot Noir that favours clarity over power. The texture is silky, the acidity vibrant, the tannins fine-grained; at 13.0% ABV the wine stays dry and lean. Already approachable young, with the substance for a few years of bottle ageing.
Terroir and origin
The "Les Crayes" vineyard lies in Monthélie in the Côte de Beaune. The vineyard's name points to chalky, limestone-rich soils that give the wine its mineral freshness. The Darviot family has held parcels here since the 19th century.
Grape variety and vinification
Pure Pinot Noir. Pierre-Antonin Darviot took over the domaine in 2019 at the age of 25, after the death of his father Jacques, and converted it to biodynamic farming. He had previously studied oenology in Beaune and worked in the Loire and in New Zealand. In the cellar he ferments up to 100 percent whole clusters. The stems lend floral notes and silky tannins.
On the palate
Cherry, raspberry and strawberry, with delicate floral notes. The finish is medium-length with a chalky underlay.
Food pairings
With grilled salmon fillet, duck breast with cherries and coq au vin. Also with mushroom risotto, veal medallions and mature Comté.
Notable facts
Ten generations of family history in one village. The domaine's eleven hectares are spread across Monthélie, Volnay, Meursault and Chassagne-Montrachet, and include seven Premier Cru vineyards. The wine is aged without fining or filtration, with minimal use of sulphur.
