About this wine

Character

A still completely youthful Pinot Noir. The nose shows dark forest berry fruit with warm, freshly pressed raspberries and wild strawberries, with cinnamon, vanilla, tree bark and juniper in the background, plus a slightly lactic note and a hint of yeast. Anyone seeking the fruit should drink now; anyone seeking the structure should wait a few years.

Terroir and origin

Les Bressandes lies exactly in the middle of the Corton hill, below Clos du Roi and Les Renardes, and together with Clos du Roi is considered the best Grand Cru site on the Corton hill. The 1.12 hectares are spread across four parcels; the soil is characterized by Bajocian and Oxfordian limestone with pebbles, clay and a high iron content. The Domaine Chandon de Briailles in Savigny-lès-Beaune is run by siblings François and Claude de Nicolay.

Grape variety and vinification

Single-varietal Pinot Noir from vines averaging 35 years old. Harvested between September 1 and 12, the grapes were meticulously sorted and fermented with a proportion of 40 to 50 percent whole clusters. The estate's red wines age 14 to 20 months in barrel, with a maximum of 15 to 20 percent new oak, without fining or filtration.

On the palate

Ripe, slightly warm dark berry fruit, interwoven with vanilla cream and fine oak. The tannin is ripe and shaping, the acidity runs through the full fruit and gives it direction. The power and minerality of the Corton simmer beneath the surface. 13.0% vol., dry.

Food pairings

Double chop of Bentheim Black Pied pork with savoy cabbage roulade, porcini risotto with shiitake stock or wild duck with chestnut purée and sauce rouennaise.

Special features

Biodynamic since 2005, Demeter-certified since 2011. Four horses plough between the vine rows: Diva, Epi, Farandole and Gipsy. The cellar dates from the 12th century, built by monks of the Abbey of Cîteaux.
