About this wine

Character

The Zeitlos Réserve is the estate's prestige crémant: pure Chenin Blanc, four years on the lees, bottled with no dosage. A sparkling wine of great finesse and precision, both pure and clear-cut, yet sensual.

Terroir and origin

Since 2014, Liv Vincendeau has farmed four hectares on the Corniche Angevine, a protected steep slope above Rochefort-sur-Loire overlooking the Loire as far as the Île Béhuard. The grapes come from an old vineyard on green and purple schist, interspersed with spilite and phtanite of volcanic origin as well as quartz. The poor soils keep yields to around 45 hectolitres per hectare.

Grape variety and vinification

100% Chenin Blanc, harvested in the first half of September 2019. After whole-cluster pressing and spontaneous fermentation, the wine was bottled in February 2020, where the second fermentation took place. This was followed by 48 months of lees ageing in the tuffeau cellars of Saumur at a constant 11 degrees, then disgorgement with no dosage whatsoever. 12.5% vol.

On the palate

The texture is creamy, the perlage silky and fine, the body subtly full. Above this lies a bright, citrusy fruit with yellow stone fruit, accompanied by almond cream, nuts and puff pastry. Fresh and mineral, with drive and depth through to a finish full of mouth-watering salinity.

Food pairings

With oysters and shellfish, with briefly seared scallops or with aged Comté.

Special features

Born in Darmstadt, she studied chemistry in York and Strasbourg before becoming a winegrower in Anjou. Her estate is Demeter-certified and produces around 16,000 bottles a year. Where the Crémant de Loire regulations require nine months of lees ageing, the Zeitlos Réserve takes 48. Terre des Vins awarded it a Coup de Cœur.
