About this wine
Character
The Escondite del Ardacho Las Guillermas 2019 is a red wine with the soul of a white. Tempranillo and Viura grow on two neighbouring parcels, are harvested together and fermented together, and it's the white variety that sets the tone. The focus is on freshness and crunch, not on fullness and concentration.
Terroir and origin
The two parcels lie in Rioja Alavesa at 400 metres of altitude and together cover 0.62 hectares. The vines are each nearly 70 years old. Roberto Oliván farms his 30 parcels around Viñaspre biodynamically; the soils consist of calcareous marl and sandstone, and the steady wind of the high sites keeps the vines healthy.
Grape variety and vinification
60 percent Tempranillo and 40 percent Viura, harvested together and fermented together. In the cellar, Oliván works minimally: spontaneous fermentation with indigenous yeasts in open stainless steel tanks, gentle extraction by punching down the must. The wine then ages for nine months in used oak barrels. 14.0% ABV, dry.
On the palate
Super fresh on the nose, with red fruit and a touch of apple skin. On the palate, an enormously refreshing acidity, fine tannin and a slender body, with bite and a taut pull on the finish.
Food pairings
With salmorejo and fried anchovies.
Special features
A single-parcel wine in which a white variety makes up 40 percent of the blend and stamps its character on it. From two tiny, biodynamically farmed sites with vines nearly 70 years old comes a red wine that lives off its acidity.
